Equipment
- Knife
- Citrus press
- Food Processor
- Glass jar with a closed lid or BPA-free sealed container
Ingredients
Dressing
- 1 Avocado medium ripe
- 2 tbsp Lime juice 1 lime
- 1 cup Fresh Cilantro*
- ¼ tsp Ground Cumin*
- ¼ tsp Sea Salt
- ¼ cup Water
Instructions
Dressing
- Cut: Cut the avocado half (avoiding the pit while cutting) and scoop the flesh into the food processor. Cut the lime in half and press the juice (with hand/citrus press/citrus juicer - I usually use my citrus press) into the food processor. Rough chop the cilantro and add to the food processor.
- Blend: Blend the avocado, lime juice, and chopped cilantro in the food processor. Process until it is thoroughly combined.
- Add: Add sea salt and water to the mixture and blend until smooth and creamy. Taste and add more salt or lime juice or seasoning per your liking (but keep it healthy but make it yours)—thin dressing as needed by adding water until it reaches preferred consistency. Store the dressing in a glass jar with a closed lid or BPA-free sealed container. Enjoy!
Notes
*You may substitute the cilantro with parsley if you're not a huge fan of cilantro. *You may substitute the cumin with crushed red peppers or cayenne or one jalapeno (seeds, stems, and membranes removed). I usually alter between cumin or crushed red peppers. *It will last in the refrigerator for up to a week. *Mix the dressing before serving. *Pairs wells with our Refresh Me Burrito https://makingadifferencebecauseyoumatter.com/?post_type=wprm_recipe&p=1315 Drizzle it also on salads, pasta, fajitas, tacos, and multigrain bowls. Dip it on veggies also. *Nutrition information is a rough estimate.
