Get ready to slice up some yummy Gluten-Free Vegan Bread made easy. The loaves of bread are so mouth-watering tasty, and flavorful that even others would not be able to tell the difference. My husband prefers this over some name-brand bread because he says it's hearty. Each bite is nutritious, light yet filling. You can make one large loaf or two medium loaves. Ingredients
  

2 Gluten-Free Vegan Bread Recipes Made Yummy Easy

  • 1 package Extra White Gold Bread Flour Blend
  • 1 tbsp Active Dry Yeast (or one packet)
  • 2 tbsp Coconut Sugar (or substitute with Dark Brown Sugar)
  • 1 tbsp Ground Golden Flaxseed (combine this to make a flaxseed egg with 2.5 tbsp hot water)
  • 1 cup Water (lukewarm)
  • 4 tbsp Extra Virgin Olive Oil (or Vegetable oil or Grapeseed Oil)
  • 1 tsp Himalayan Salt
  • 1 tbsp Italian Seasoning (optional) (thyme, rosemary, sage, oregano, marjoram)
  • 1 tbsp Vegan Butter (optional) (use 1 tbsp each to spread over loaf or loaves; gives it a golden shiny crust)
  • 2 tbsp Nutritional Yeast (optional) Sprinkle on top if you desire a robust cheesy taste, or use vegan cheese sliced or sprinkled on top)

Instructions
 

Steps for 1 Large Loaf or 2 Medium Loaves

  • Mix: In the mixer bowl, mix bread flour, yeast, and sugar on low speed for 2 minutes. Add ground flaxseed and water to a small bowl and let it rest for 5 minutes to thicken. Once thickened, add to the mixer bowl with dry ingredients. Add the remaining liquids (cup of lukewarm water and oil).
  • Knead: Knead until dough forms (about 2 minutes). If it looks dry, then add up to 4 tbsp of water (slowly). Then add salt and continue kneading for approximately 4 to 6 minutes. The dough should look shiny and sticky to the touch. Tip: To avoid dough sticking to bowl and hands, lightly spray/drizzle (1/4 tsp) both with olive oil.
  • Spray/Drizzle: Spray or drizzle oil on top of the dough to prevent it from drying out. Cover with plastic wrap. Store in a warm, dry place to rise for 60-90 minutes. The goal is to have the dough double in size.
  • Move: Move dough and place it on a lined baking sheet. Gently punch the dough to get the air out. Oil hands and shape dough into one or 2 loaves. Place in a large loaf or 2 medium loaves pans.
  • Cover: Dampen a clean kitchen towel and cover pan(s) to rise again for an additional 30 minutes.
  • Preheat: Preheat the oven to 400 F while the bread rises in a warm, dry place. Place a dish with boiling water on the bottom oven rack.

Daily Bread

  • Bake: Bake in the oven for 5 to 7 minutes on 400F. Then reduce heat to 375F and further bake 35-40 minutes until golden brown. Drizzle tbsp of vegan butter on top the last 5 minutes of cooking. Monitor it closely at 35 minutes to determine if additional time is needed to cook.
  • Remove: Remove from oven and let cool on a rack. Bread will remain fresh for 24 to 48 hours in an airtight container. You can slice and freeze it for up to 3 months.

Italian Rustic Bread

  • Bake: Sprinkle Italian seasoning and or cheese on top of loaf or loaves. Bake in the oven for 5 to 7 minutes on 400F. Then reduce heat to 375F and further bake for 35-40 minutes until golden brown. Monitor it closely at 35 minutes to determine if additional time is needed to cook.
  • Remove: Remove from oven and let cool on a rack. Bread will remain fresh for 24 to 48 hours in an airtight container. You can slice and freeze it for up to 3 months.
