Seven Egg Exchange for Vegans, Vegetarians, and Healthy Cooks

Use any of my top 7 Egg Exchanges when cooking or baking. Laminate it and keep it close to your cook books Trust...it will save you time and energy and give you a peace of mind. Hope it helps!

Instructions

  • 1/4 Cup Unsweetened Applesauce or Mashed Banana
    Add to: Quick bread, brownies, cookies, cakes, pancakes, muffins, etc.
    Note: Baking with bananas will give it a banana taste.
  • 3 TBSP Aquafaba (chickpea liquid after cooking or canned)
    or
    2 TBLSP Aquafaba for egg white (and 1/4 TSP Lemon Juice/White Vinegar; Whisk until frothy)
    or
    1 TBLSP Aquafaba for egg yolk
    Add to: Egg whites, cookies (meringues, marshmallows, macaroons, or nougat), pancakes
    Note: It has a neutral taste
  • 1 TBSP Chia Seeds (ground or whole)
    +
    3 TBSP Water
    (whisk and let thicken 10minutes before adding to recipe)
    Add to: Quick bread, brownies, cookies, cakes pan, muffins, pizza dough, meatloaf (vegan), meatballs, veggie burgers.
  • 1 TBSP Flaxseed meal(ground)
    +
    2.5 TBSP Water
    (whisk and let thicken 5 minutesbefore adding to recipe)
    Add to: Quick breads, brownies, cookies, cakes, pancakes, muffins, pizza dough, meatloaf (vegan), meatballs, veggie burgers
  • 1/4 Cup Apricot/Prune (puree)
    or
    Baby Food
    Add to: Quick bread, brownies, cookies, cakes, pancakes, muffins, & pizza dough.
  • 1/4 Cup Pumpkin/Squash (puree)
    or
    Baby Food
    Add to: Quick bread, brownies, cookies, cakes, pancakes, muffins, oil
    Note: Food will have a slight hint of pumpkin but not overwhelming
  • 1/4 Cup Silken Tofu(puree)
    Add to: Firm tofu is an excellent option for egg-free cooking and works best in savory dishes such as eggless quiches, lasagne, vegan egg salad, or a breakfast scramble. The puree is good for quick bread, brownies, cookies, & cakes.
    Note: It has a flavorless taste but will absorb the flavors of your seasoning.
