Ingredients
 
 

Sweet Potato Burrito Bowl

  • 1 cup Long Grain Brown Rice or Rice Cauliflower
  • 1 Sweet Potato-Large or 2 smaller
  • 1 tsp Smoked Paprika
  • ½ tsp Garlic Powder
  • 2 tbsp Extra Virgin Olive Oil (optional) substitute it with vegan broth reduced sodium
  • 4 tbsp Lime Juice
  • ½ tsp Himalayan Sea Salt
  • 1 Can Black Beans rinsed and drained
  • ½ tsp Cumin (ground)
  • ¼ tsp Ginger (ground)
  • 1 tsp Chili Powder
  • 2 Red Bell Peppers
  • 1 cup Cooked Corn (frozen or can) or can of Fire-roasted corn medley rinsed and drained
  • 1 Avocado dice or quartered
  • 2 Cilantro (bunches)

Instructions
 

  • Preheat your air fryer to 390 degrees. Spray the air fryer basket with a nonstick cooking spray.
  • Cook: Cook brown rice/rice cauliflower according to instructions (for brown rice, it's about 45 minutes) first in a medium saucepan, which will help it cook while simultaneously cooking vegetables. In a different pot, warm up black beans with cumin and ginger for approximately 5-7 minutes. Tip: Remember to rinse rice until water runs clear.
  • Peel: Peel and cut the sweet potatoes into medium chunks. Lay the sweet potatoes in the air fryer basket. Be sure they are in a single layer. Cook for 8-10 minutes. Add bell peppers and cooked corn for the last 5 minutes to cook. Remove from pot and air fry.
  • Transfer: Transfer rice and vegetables to individual bowls. Arrange how you would like (layered/vertical/vegetables circling rice).
  • Mix: Mix seasonings (smoked paprika, garlic powder, Himalayan Sea Salt, chili powder, lime juice) with olive oil and drizzle over bowls.
  • Enjoy your Sweet Potato Burrito Bowl!

Notes

*Optional: Is there a need to soak brown rice before cooking? It's optional, but at Making A Difference Because You Matter, we highly recommend it! Why? Because it helps in improving digestion by discarding some of the phytic acids that naturally occur in grains. Lastly, it helps to speed your cook time. No one has time to be in the kitchen for an extended time. Right? Well, at least not in my household. Lol
*Always drain and rinse off can vegetables to reduce sodium and metal intake.  Your body and mind will thank you. 
*In a dash and no time to wait on a meal?  Then cook rice cauliflower; the time to cook the meal in total will be approximately 15 minutes versus 45 minutes for brown rice.  You choose. They both have great nutritious value. 
*Add ginger to bean/legumes to aid digestion and decrease bloating/gas.
